Product Description:

1. Key Features:

A. De-acidification: The natural granite wheel and the outer pot rotate at a relative velocity to make the cocoa finer and melt in the mouth.

B. Fine grinding:  The interactions on the relative velocity between the pot and the granite wheels make the cocoa cream delicate. The chocolate should be melted immediately in mouth after conching.

2. Suitable for in store use, creation purposes, small scale production, baking industry, handmade chocolate production, and cocoa product sales conducted directly by cocoa producers.

3. Grinding refinement reaches 20µm or finer that can be melted immediately in mouth.

4. The capacity of the pot can be up to 4kg of cocoa butter cream, although the suggested loading volume is 2kgs.

5. Can run continuously for 5 to 7 days.

6. Equipped with an overcurrent protection device.

7. High durability granite stone wheel with mechanical hand wheel adjustment.

8. FDA approved silicone applied between the granite and the pot.

12. The time needed for refining depends on the acid level the cocoa beans absorb from the fermentation. Generally, the refining process requires 24 hours or more. Hence, chocolates are expensive not only because of the high price of cocoa beans, but the long refinement time which can also generate additional cost.

13. The refining temperature at 50 to 70℃ gives the cocoa the best taste. But it can differ from different people as every individual prefers different tastes.

14. Everyone has a different preference on the acidity in chocolates. With this reason, the acid degrees should be preserved during the refining process are diverse.

15. Grinds until the surface become smooth to present the best texture.
